Onion, cod and honey tart

If you’ve never tried it, mixing sweet and savory foods on the same plate may seem like both a modern and bold idea.

Food pairing is precisely a method for identifying which foods pair well based on the intrinsic components and properties of each one, from the perspective of food science. This pairing method is useful when suggesting possible food combinations and designing new recipes. As a result, today we suggest an onion, cod and honey flatbread. Are you up for trying it?

Ingredients (for 4 people):

For the dough:

  • 400 g of flour
  • 200 mL of water
  • 2 tablespoons of extra virgin olive oil
  • A pinch of salt

For the filling:

  • 4 large onions
  • 1 salted cod fillet
  • extra virgin olive oil
  • salt
  • black pepper
  • 1 tablespoon of honey
  • fresh thyme

Preparation:

  1. For the dough: In a bowl, place the flour and salt. Make a well in the center and add the water and oil.
  2. Knead until you obtain a smooth dough. Let it rest for a while.
  3. For the filling: Peel the onions and slice them thinly into julienne strips. Remove the skin from the cod fillet and cut it into cubes.
  4. Dust a surface with flour, roll out the dough with a rolling pin, and place it on a baking tray lined with parchment paper. Prick the dough with a fork.
  5. Brush the dough with olive oil and spread the julienned onions over it. Season with salt and pepper, then bake for 10 minutes at 200ºC.
  6. Remove the flatbread from the oven and add the cod cubes and thyme.
  7. Bake it for 2 more minutes, drizzle with honey, and spread the thyme over the top.
